I'd like to get my wife 1-2 really nice knives for Christmas.

We have nice steak knives and a nice pearing knife, but outside that we have what came in a set for our wedding.

Any suggestions are appreciated.

How much are you willing to spend?

Every home chef should have a great chef's knife for sure.

Get her a couple of Shun Premier knives that you think she would like. They're light and keep an edge but they can break if dropped. If the Premier's are too expensive, look at the Classic line. I have both and like them all.

I would get her a nice Japanese designed knife like a Gyoto:

Chef Knives To Go

Something like this:

Kohetsu Aogami Super Gyuto 210mm

I would also recommend a bread knife. It's good for cutting lots of things, not just bread.

Something like this:

Victorinox

Jamison Chopp

I have a bunch of knives and use a chef knife from Jamison chopp the most

Coutelier keeps a great stock. Check them out and if you see one you like, see if it’s cheaper elsewhere

German steel if you cut a lot of hard items, such as cutting through tough ligaments/cartillage, tough vegetables, etc.

Japanese steel is typically sharper but more fragile.

Wusthof for German. I use Dahlstrong for Japanese, though there are better Japanese options out there if budget is unlimited.

Before buying a chef's knife I would figure out which style she likes better. Lots of people live Japanese style chef's knives but I hate them, I much prefer the handle and balance of a Western chef's knife.

Also, you need to consider how you are going to sharpen them. Good knives deserve to be well taken care of an kept sharp. Be aware when you start to learn about the different options sharpening can be a hobby within a hobby so there is tons of information about it.

More robust knives defintely have a place in the kitchen, but chopping vegetables with a Japanese makes it so much easier/more enjoyable and result in a more consistent product.

I like Dexter Russell soft grip knives. Whatever you get, be sure to have good cutting boards/ mats and a sharpening steel.

If I were buying knives right now, I would strongly consider this deal.
