Pretty much. The tail meat will go bad quickly in a dead lobster. You have like 12-24 hours to eat a lobster after it dies or the meat will go bad. I'm not sure what happens but the same thing happens with crabs/crawfish. I've read that a toxin is released into the meat after dying but I'm not sure if that is the correct scientific explanation. The lobster will get an ammonia smell once it goes bad.
If you take the tail out right after it dies, it will be ok to freeze. I'm not sure how the packers do it. They may kill them while alive and then break off the tail to get the meat and then freeze.
Crabs/Crawfish are cooked alive first and then picked/peeled which prevents the decay of the meat.

I've seen them frozen whole, but cooked in grocery store freezers. I doubt that's optimal, though. You could likely vac seal cooked meat that you don't use, but I don't think I've eaten frozen cooked lobster meat except maybe in a bisque and I'm not even sure I've had that.

He ships overnight....I would tell him a head of time what you needed and for when so he had them and was ready to ship the day before you need them.

Looks like I may need to start paying Wickowick commissions! I'm still shocked that this thread has been the reason for at least 100 successful orders to date.

PS don't freeze anything unless it's the picked meat. Even then it won't ever be as good as the fresh.

Welcome to the board, where are you located in Maine? Wife and I got back from a great trip up there in October, visited Portland, Kennebunkport, Bar Harbor, and drove through the White mountains, had a great time.

ETA: I guess you can tell when you get mentioned because you start getting emails from South Louisiana and Mobile among other spots...

He's a friend that works for a lobster company in the northeast.

I only like to ship them in 12 or 24 lobster packages. This is the maximum per box I can fit in each. Any less or anymore I have to change the boxes and the shipping amount changes so I typically lose or break even for those shipments, so I stopped doing them. I only have a lobster license so it's all I sell. Thanks guys
