Jars of Roux and Spoilage

I have a couple jars of Savoie's Roux that have been sitting in my pantry for a while. They have a sell by date of October 2015. Will roux actually go bad if unopened?

Yes, the oil in the roux can go rancid. It will have a decidedly off, fishy smell.

They're probably fine, but I'd toss them because replacement is cheap, and I'd hate to ruin a gumbo with off tasting old arse roux.

I don't think it can go rancid unless it is exposed to oxygen, which is not a problem in a sealed jar. Use it.
