Jambalaya question

I'm a pretty avid cook
But one thing I haven't tackled is a homemade jambalaya.
I was going try it on Sunday
I have a 6qt Dutch oven cast iron pot
So that should work
Looking for a recipe for about 10 people

Read over the techniques tab on the bottom, then read over it again. That and my Uncle House is where I learned to cook rice.

Celery has a pretty pronounced flavor. It's been my experience when it's in Jambalaya, it's overpowering.

I personally only use onions and green onions, but just my opinion. I don't belevie most of the comeptition cooks use it either, but I could be wrong...
