Jambalaya help. Rice not done

I went 100% from scratch/memory trying to get a feel for my recipe. It tastes like it should but the rice is a touch undercooked. Like 2%of the rice is a bit hard.

Any tips to salvage?

Roll or turn it with a little liquid, not much. And add a bit of heat with a tight lid for a few minutes(5 to 10), and it'll likely pop.

Put it in a roasting pan, seal the top tight with aluminum foil (where very little if any steam will escape) and stick it in your oven on the middle rack at 350 for about 20 minutes before you check it. If it's still not done, repeat.

I've done this before. Getting a good seal steams the hell out of it without adding more (and possibly to much)liquid.

Putting it in the oven takes it off of the direct heat, and makes it less likely to burn or scorch (actually pretty hard to burn it this way).
