With any type of new grill I always use a cheap meat in case I screw it up. Maybe try some leg quarters or pork chops.

Big Green Egg charcoal is actually made by Royal Oak, they just charge you more for the BGE label.

I've used over 40 bags of Royal Oak and got tired of finding rocks, metal, and other debris in the bag, not to mention inconsistent pieces. I'm on my second bag of Fogo and it has been great. Another plus is it's delivered to your door step.

MAPP torch is better imo. Doesn't need to be plugged in and those yellow tanks last >1 year

I got the 2017 Kamado joe. They made some serious upgrades especially to the gasket. Stainless steel mesh/nomex gasket, divided ceramic basket to prevent cracking, and new swivel top flew.

Love this thing.

I use these to start. I have two large BGE, one at home and one newer in the country. Both have platesetter that I use almost always. I have one BGE pizza stone that I bring back and forth as needed and recommend it. I have had a bunch and the BGE brand is the best I've had in a pizza stone.

I burned the gasket on the old one at about 1 year old, replaced it and proceeded to burn the second one up shortly thereafter. I've been cooking on the older one for probably close to 10 years now with no gasket and have not noticed any difference.

I think I will get the fan attachment soon to keep it constant. I have been using the Royal Oak lump but I will also use just regular Kingsford briquettes too. Just more ash but on short cooks they do ok.

this right here. I just don't have a clue how metal gets in the mix, I switched to the mesquite that you get at Sams.
