I'm losing faith in our MES.

Bought a MES a while back. Seasoned for a few hours per directions. Have cooked in it a dozen times or so. Nothing I cook in it tastes as good as on the old propane smoker. Smoke isn't as good. Even the seasoning doesn't taste the same.
For the record, I'm using the amazen pellet tray and logging at both ends to get good smoke. I used a water pan the first time, but realized that was a huge mistake as my brisket tasted like every bit of salt on it had steamed off.
Any suggestions? Tell me it will get better. I'm disappointed right now. Cooks great, and I love the amazen pellet tray. It's just not getting a smoke ring or tasting worth a crap.

Oh gotcha. Yeah, pellet smokers really aren't very good.

It's not a pellet smoker. But I did buy the pellet tray that everyone uses with them because it puts out great smoke much easier. It normally takes chips but you have to fill that thing every 20 minutes.

I use that same set up to do my briskets and they come out great. I've never had a propane smoker to compare it to, but I love the food mine puts out and friends and family usually compliment it.

Get a smoker that burns charcoal and wood the way God intended for meat to be smoked.

You wont get a smoke ring ever. That ring is a chemical reaction that has something to do with charcoal.

But I get it using chips. Why not pellets? It's just chips ground up and compressed?

Hmmmm. You should not get any smoke ring with chips. I never do. Im not sure what is going on if you do.

Well, I guess the bigger issue is that with both the chips and the pellets, the smoke flavor isn't near as good and the seasonings are almost non-existent. Kinda of like a bland roast. This is with brisket, ribs, butt. Much different taste than on the propane smoker. And of course, both are different from straight wood.

Im smoking Boston Butt right now in my Primo XL. Natural lump charcoal and chunks of cherry wood.

22.5 "WSM all you need.it was the best $ 399.00 I ever spent. I also have a Backwoods Chubby G2 insulated smoker. I smoked a Turkey in the Chubby back in the summer that was outstanding.

Hush up boy. Charcoal has nothing to do with a Smoke Ring. As long as there's enough smoke, you should get a ring.
