Ideas to cook for around 40 people tomorrow

Cooking for about 40 folks at work tomorrow and was planning on smoking some pork butts. Unfortunately the weather isn't going to really allow for that.

Throw me some ideas, food board.

Gumbo is my large-group go-to. Potato salad on the side, make some fancied-up garlic bread to entertain the eyes & greedier ppl.

I didn't mean to imply that garlic bread lovers are greedy; I love garlic bread myself. In a work group of 40, the manners level & hunger level can vary greatly....some show up early & are ready for seconds before the rest have even had their first bowls...it's a cheap & easy nibble to put out for pre-meal grazing, or "filling the cracks" if you have large appetites in the group.

Aside from the other obvious and good suggestions, white bean chicken chili is good for a crowd. Recipe is on the TD cookbook.

You could also do oven pulled pork. Not as good to me, but it would work.

Shitty weather = gumbo or chilli

Ground meat spaghetti

Red beans and rice with baked chicken or hamburger steaks

Vegetable soup

Grilled hamburgers
