How to cook fresh tuna? I have no idea.

I'm not a fisherman so I have no experience with fresh tuna. Somebody gave me several pounds of large chunks of it with skin on. Please tell me what to do with it.

Filet than skin off.

Season, sear, and eat rare.

Seriously though, take off skin to make steaks. Season and sear hot, as the previous poster said. Enjoy!

take the skin off with a filet knife
cut into steaks about 2" thick
get a cast iron pan screaming hot, it should be smoking and white
brush the steaks with oil, then salt and pepper
slap them on the hot iron and walk away for 60 to 90 seconds
flip and do it again

remove, sauce as desired or not

Please, please, please don't cook it much. Very few things in the culinary world makes me as sad as a cooked through tuna steak.

Actually, if you don't get the pan too overly hot, you can press the steak into some sesame seeds and cook it very quickly on that side first, which will give it a nice presentation.

Let the tuna steaks soak in some teriyaki and soy sauce for about 2 or 3 minutes before cooked. Fire up the charcoal. Sprinkle some fresh garlic on top of the tuna steak. Cook on each side for a minute or so a piece. And bammmm son. That shite is rolling!!

Buy one
buy some lump charcoal
start a fire
Put your bbq put gray over it
Soak the tuna in soy
Put it on the grate
Count to 10
Flip
Count to 5
Plate
Eat
