How long do you Fry a turkey?

It's been a few years since the last time I fried turkeys. I think I remember doing it @375 degrees for 2 to 3 min/lb. Does this sound correct.

Me thinks its more like 3.5min/lb at 350F. I guess you could go hotter and shorter on a smaller bird though.

I do mine at three minutes per pound. Keeping the oil between 300-350.

Thanks guys. Now that you say it, I think 350 is correct. Gonna do a 12lber tomorrow morning. I hope it turns out ok.

Make sure its completely and I mean COMPLETELY thawed, or you will kill yourself.

Try the 3min/lb recommendation and pull it out and check it with a thermometer deep in the breast and thigh. 160F is sufficient. It will rise a little higher while resting.
If the temp is any less than that, another 5 minutes should finish it up nicely.

Start with 360 degree oil and then keep it above 325 while frying. Plan on 3.25 minutes per lb at a minimum but it shouldn't take more than 3.5 per lb to get him done.

How much oil do I need to put in a pot for a 17 lb turkey?

Im using 1 of those Turkey Frying kits that come with the pot, burner and everything you need.

Just need to know how much oil to use so I dont overflow.

Do yourself a favor and bake that thing. 17 lbs is too big to fry. The outside will be hard as a rock by the time the inside is cooked.

12-15 pound bird

get oil up to 250

get bird in oil

bump oil up to 350

cook for 30 minutes

remove from oil and let rest 30 minutes

serve

Or quarter it and fry the pieces instead of the whole bird.. anyone ever tried that?

Nonsense.
However... I do like the idea of splitting it in quarters.

To the person with the question. Put the bird in the pot, just barely cover with water, take the bird out and mark on the pot where the water level is. Dry it all off, fill oil to that level, and cook at 350F for 3 to 3.5min per/lb if whole.

If you decide to quarter it, it will cook a good deal faster. You should use a thermometer to get the pieces to 160F. Remove and let rest before carving up.
