Just taste it
May be flat. It's still alcohol if you're desperate

Not if unopened.
Champagne is generally hardier than many people give it credit for. As a general rule, I would not chill a bottle unless I planned on drinking soon thereafter, but being in the refrigerator for a couple of weeks certainly hasn't caused any damage.

Or sparkling wine?

I assumed opened
How would unopened champagne in the fridge for a couple weeks even be questionable?

Desperate times call for desperate measures.
Waste not, want not.
Think of the starving people in India with no champagne at all.

As long as it is unopened it will be fine. If opened it will go flat in a few hours.

Once it's no longer sparking, it's just wine. Drink it or cook with it.

Because some people think it is more delicate than it is. The "don't chill until your ready to drink" rule has morphed into "if I keep it cold for more than 24 hours, it's ruined."

If unopened, a very long time. Like as long as it's expected to age to be drank. Cellar temp on champagne is 45 degrees technically. You're doing it a favor.

How long unopened and not chilled? I found a bottle someone gave me a few years ago.

As long as you can keep your fridge running.
Even longer if it's a YETI fridge.
