Instead of going out this weekend, I told the wife I would cook dinner for us Sunday night.

I'm starting with a shrimp toast appetizer followed by a grilled romaine salad dressed with parm and a red wine vinaigrette. The entree will be a seared duck breast with an asparagus and mushroom risotto as well as roasted brussel sprouts. To finish off the meal I'm going to do a salted caramel custard.

I think my only issue is going to be pacing the cooking times so I can enjoy the meal with her an not be cooking the whole time.

Probably going to have to do a good bit of prep work on Saturday.

Menu sounds tasty, but why so many things requiring last minute attention? The shrimp toast will need to be fried immediately before serving, and ditto for the seared duck breast and the risotto (which is notorious for congealing as it stands into an unappetizing lump). I'd swap out two of those items for things that can be prepared in advance, especially if your dining room is away from the kitchen. Otherwise, she's gonna be sitting at the table alone for a while.

Ditch the fried shrimp toast app, go with something simple and nibbly, like a warm goat cheese round alongside the salad, served with crostini/tiny toasts. Then do the seared duck breast, but swap the risotto for a wild rice pilaf (holds way better, goes well w duck).

Chocolate mousee for dessert....easy to make ahead, serve w fresh raspberries and strawberries.

I'll stick with my menu. Shrimp toast is amazing and so is duck. Rice pilaf sucks and so does chocolate mousse.

Timing won't be a problem at all. Enjoy the process...and parcook the risotto, finishing it while the duck rests.

The only pic you will see of him is a dude who is not married and has no date sitting a keyboard alone.

I mean, the menu sounds good to me. I would take her time concerns into consideration, though.

Man that sounds good but gassy.

You sure you want to do that?

How about a light soup instead.
