Trying to understand when something that smells like arse and looks like mold actually goes bad.

Definitely an acquired taste. I love bleu cheese.

I recall Arsenio Hall asking a similar question. "How do you know if sour cream is too old? I mean, the shite already sour."

It looks like mold because it is mold.

And i love it.

It will go bad, gets a strong arse odor. I dont think it smells bad when it is fresh.

How could it look or smell any worse than it does normally?

How do you tell when something that has a strong arse odor has acquired a strong arse odor?

It's a moot point, though. Bleu cheeses are never going to last long enough in my house to ever acquire a strong arse odor.

It will have an pungent ammonia smell to it.

Easiest way to tell is by the color. If the white part isn't it's natural color, like if it's orangish, pinkish, or brown, it's developing bad bacteria.

Just kidding. The answer about smelling like ammonia is correct.

Well, I've cultivated a fondness for that fluffy blue mold that eventually grows on the surface. Gives it a nuttier flavor. Yum.
