How do you know when bleu cheese goes bad?

Trying to understand when something that smells like arse and looks like mold actually goes bad.

It will go bad, gets a strong arse odor. I dont think it smells bad when it is fresh.

It's a moot point, though. Bleu cheeses are never going to last long enough in my house to ever acquire a strong arse odor.

It will have an pungent ammonia smell to it.

Easiest way to tell is by the color. If the white part isn't it's natural color, like if it's orangish, pinkish, or brown, it's developing bad bacteria.

Well, I've cultivated a fondness for that fluffy blue mold that eventually grows on the surface. Gives it a nuttier flavor. Yum.
