A few more Hops i want to try

Calypso
El Dorado

Huell Melon - Developed at the Hop Research Institute at Heull, Germany and released in 2012. A daugher of Cascade, Hull Melon is an aroma hop that is true to it’s name. Honeydew is a keynote to this hop along with strawberry, orange and vanilla. An excellent alternative for someone looking for a hop that doesn’t impart the standard citrus flavor. Suitable for IPAs and other American style ales.
Palisade - Bred by Yakima Chief as a dual purpose hop. Moderate bittering with apricot, grass and clean floral aromatics.

I've been using a lot of Maris Otter as well. It makes up 75% of my grain bill in my coffee vanilla porter and over 30% in my latest pale ale. In fact, I'm going to brew a SMaSH with it and an experimental hop variety (working name Nuggetzilla) this weekend.

Just started drinking a batch of Christmas ale I brewed several weeks ago. Been in bottles for two weeks and I've noticed I have no noticeable yeast in the bottom of the bottle. I've never had the happen before - I can pretty much pour the entire bottle in the glass.

This unusual? Beer tastes pretty good...

ETA: also wanted to add beer seems well carbonated. Good head retention as well.

I skipped the whole bottling stage but that sounds like a winner to me. Only bad thing I could see is if the yeast are still active, that's why they haven't settled out, and you may end up with bottle bombs because they're still working, producing more CO2. Not at all saying that's what's happening but only negative I could think of.

I use 2-row as the base in all of my brews but have really liked the way Belgian Munich has worked in my 100% brett ales. I may go 50/50 Belgian Munich and 2-row in the next batch.

I use lots of oats, probably more than anyone else on this board. I'm also a fan of the de-bittered malts.

HOPS

Whatever is on sale? I love Citra in my sours and was really impressed with Nelson Sauvin. I'm also a big fan of Chinook, that is why there is a pound of them coming to my house at some point via the mail and a pound of Citra. I got a pound of Cascade hops on sale for $6.99 and those are in the garage in a glass jar ageing and I use those for my sour brews.

Yeast

I use a house blend that contains Jester King yeast blend, Saison DuPont yeast (supposedly two separate strains in the dregs), Crooked Stave saison yeast, and whatever has fallen into the bucket during open fermentation. I have a Brett strain that I harvested from a bottle of Crooked Stave Hop Savant. Then my spontaneous fermentation barrel is 100% local yeast harvested in the backyard by a coolship.

Souring Bacteria

Who knows, whatever is in my sour barrels. I've also used 2-row to harvest lacto to sour worts.

I was going to rebrew my zombie dust clone with mosaic, but couldn't get wyeast 1968. Gonna reformulate to more of a DIPA with US-05 I think since it finishes so low in FG

Just an experimental hop from Yakima Valley. High alpha hop from the Nugget family. That's not the final name of it. I figured I'd buy a pound of it just out of curiousity.

I know freezing hops is the best way to store them. How long do hops stay fresh when frozen?

They'll last a long time when frozen. I should have plenty of hops to last me through 2015 for my hoppy beers. Got a pound of Simcoe, Mosaic and Amarillo, as well as just under a pound of this Nuggetzilla and just over a pound of Citra.

Frozen and air tight/vacuumed packed they should be good for a long time. I have used 2+ year old hops and they were just fine. I'm sure they could last indefinitely if stored properly.
