What are yall doing for Fall brews? I'm thinking of doing a rye saison and putting pumpkin and brett in half. Not a huge pumpkin fan, esp pumpkin pie like brews. I'll probably aim for something more subtle.

Both of my last two beers won't be ready until well in to the fall, maybe later. I need to get on something for fall, but it's so hard to think of fall when it's hot as hell out. At the same time I need to get my wild ale going. The starter has been sitting around for a little while now and is looking nice and healthy.

Yeah, I could easily let my sour sit for a few more months.

What did you use to build your starter?

That is what I'm saving mine for.

I just peaked in on my sour wort saison and the brett has really kicked it up and there is some nice pellicle. I guess that means that I will be letting it sit for a good bit more.

I don't mind bottling, like to bottle condition my stuff,

when you come down this way for your race, let's trade some homebrews. I might even have my first batch of all-grain ready to drink by then.

Oatmeal Stout. Brewing that one in about 2 weeks.

After that I'm thinking:

Black IPA
Rye IPA
Biere de Garde

My next 2 brews will be a vanilla and espresso imperial stout and then a brown ale.

I want to make one of these one day. It just seems kind of boring.

Did they give you % or just grains & hops used?

Strange thing is, my original grain recipe wasn't too far off. Granted they don't have oats, and have about 3 more grains.

quote:

78% British Pale Malt
6% Roasted Barley
2% De-bittered Black Carafa III
2% Crystal 75
2% Chocolate Malt
3% Coffee Malt
7% Roasted Oats

And i used the same hops, based on their website suggestions. But the % of bittering i was using is also really close to their actual %'s.
