Like 1.1, actually got it down to 1.025 for about 10.0% abv. Thought it would stall for sure but i guess 3 packs of yeast did the job.

I just put my boil pot full of wort in my fermentation fridge. But I've also just left it on the floor inside overnight with a lid on. It doesn't really matter if funky shite starts growing in it as you boil that off. I did one time have some nasty, stinky stuff growing on the wort surface. The final product tasted great.

lets dry hop the crap out a RIS and throw a lot of bourbon soaked white oak chips in the secondary

do y'all use oak chips or cubes? American or French? Light or dark?

I've used some chips in a kriek... French/american and light/dark toast is all a preference thing based on what you want from the oak.
