Gumbo: Potato Salad or Rice?

I tried it and don't like it, The ps breaks up in the gumbo and totally changes the consistency of the gumbo.

Rice and sweet tator on the side.....100%!
Didn't hear about the tator salad thing until I meet my wife 12 years ago.

Rice for me. Potato salad on the side is great. I might drizzle some gumbo over it.

both, if possible.

But if forced to choose between the two, potato salad.

Opelousas-style (with a sweet potato) is good too

PS on the side. Put a little PS on your spoon and then eat your gumbo with rice in it like normal. I thought everyone did this.

It's interesting to when these threads come up: Someone will say, "My family grew up south of Bourée swamp, and I spoke French until I was 12, and everyone I knew put potato salad in gumbo." Another will claim, "My whole family has lived on St. Maurice Bayou for three generations, and we never heard of anyone putting potato salad in gumbo."

Maybe people need to get out more.

I grew up in north LA, and my family always did rice on bottom, scoop of potato salad on top/side, but my parents had picked it up when they lived in Abbeville and Ville Platte.

PS on the side is great but with the either rice or PS question I assumed it was in the gumbo.

I really enjoy a dark gumbo like Prejean's or Mr. B's and don't want anything interfering with that flavor and texture. Rice is a perfect partner.
