Great fish recipe I created

I bought some tilapia and wanted to experiment. I tried this out and it turned out great.

Two tilapia filets
Dust both sides with garlic powder and Cajun seasoning
1/3 cup of lemon juice
1/3 cup of lime juice
1/4 cup Italian dressing

I cooked each side first and then poured in the the juice and dressing.

The key is covering the fry pan. It basically boils the fish in the juice and slowly creates a reduction that is absorbed by the fish. Fish comes out falling apart and super tender.

May be my favorite recipe now for fish. Very simple but I thought I would share

Stopped reading after tilapia. Sorry but at least buy or catch some fresh fish!

I don't like tilapia but it's the best I could get. It was at least fresh and not frozen.

You could get a pie crust, eggs and cheese and turn that into a nice tilapia quiche.

Not at all. It has a brief tartness on the front end and finishes with a kick of spice.

Never frozen and vacuum sealed.

I don't live in LA so the fish availability is lacking.

I eat tilapia and salmon because that is what is available where I shop. I'm not taking a separate trip to find fish elsewhere. So....I'm SOL

The way I cooked the tilapia makes it great. I'm sure it would be even better with a different fish.

You are welcome here lynxcat. Boiling fish or meat just does not sound right. I think maybe you poached that fish!

Where are you working these days? Still in Memphis?

I basically just have the fish cooking in the juice and the cover slows down the reduction. Boil is evidently quite wrong so maybe poach is what describes this

I'm in Dallas now...left the consulting gig a bit ago and couldn't be happier.
