Vacuum sealed on day of purchase. Thoughts?

Defrost it then give it the look/feel/smell test.
Does it look OK? If so,
Does it feel ok? (Etc, not slimy) If so,
Does it smell ok?
If all those check out, cook it up! Imma guess it's probably freezer burned but otherwise fine.

I have vac sealed meat on and a day or two after the SELL BY date with no issues.

I cooked a rib roast almost that old the other day. It wasn’t vacuum sealed - just store packaging. It was fine.

If it has been frozen since you vac sealed it, it's probably fine.

That is just the "Sell By" date. The store is supposed to remove it from the shelf by then. It doesn't mean the meat will spoil after that date. Vac seal it and freeze and it will stay good for a couple years.
