Gas vs. Electric Oven?

I'm in the market for a new oven. Should I get the all gas range or a duel fuel with the gas top and electric oven? What's your preference?

Def gas for the cook top. Electric ovens are okay but suck if you want to broil things.

I would go all in with gas. All gas would come in handy in th e event of a power outage as in gustav.

So everybody is saying all gas, and I thought this too, however I read online that people think the electric oven cooks more evenly and holds a temperature better.

I prefer electric ovens because they hold temperature better and because when you burn gas to cook with, water vapor is created and can throw off baked goods.

As for broiling, electric ovens get touchy because they operate via thermostat and will cycle if the interior temperature gets too high. Since most of broiling is done via radiative heat transfer and not convective, the air in the oven doesn't need to be hot. Crack the door of the oven and prop it open with a ball of aluminum foil, and you can keep the temperature of the oven low enough that the element doesn't cycle and throw off your broiling.

any decent gas range over $500 provides a convection option so cooking evenly isn't really an issue.

i switched to gas earlier this year and i freaking love it. i would never go back.

ps did i mention the 5th burner on here?

This is pretty much the conventional wisdom. If you have a convection gas oven, it supposedly produces more even heat, akin to electric. I don't think you can get a gas oven that is self-cleaning though, so that could also be an issue.

not true. look at bestbuy/lowes/homedepot/sears at $500 GE gas ranges & up. almost all have a self-clean option.

in fact the one i got (with the 5th burner ) actually has some kind of porelin or anodized oven racks that don't turn black when you leave them in to clean it. super cool. i know the discoloation doesn't hurt regular racks and its ok to leave them in, but i like GE found a way to solve this problem...even if the fricking socialist bastards didn't pay any tax this year.

gas ovens seem to heat the house more and stay hotter longer after being turned off...


or, maybe i'm just having flash backs from the days before and without air conditioning..

fwiw, i went from having an electric glasstop for 10 years to gas and i was in love 10 minutes after i started using gas.

will never go back.

The real answer is electric, no idea why everyone here is pro gas oven. I have a gas-gas range but it's nowhere near as expensive as the dual fuel ones. Electric ovens are industry standard for Wolf, Viking, Decor...they're better. I just bought one of those Williams-Sonoma countertop ovens to make up for my huge gas oven's inadequacies.
