A buddy of mine is giving me a couple slabs of tuna this afternoon. Looking for ideas different from what I usually do, which is either sear it or make a tartar.

Sliced thin with soy sauce, lemon juice, cilantro, fried shallots, and jalapeño.

That would be a solid plan. Can add a little ponzu to that as well.

I’ve been intrigued lately by those sticky rice things people have been pan frying.

Make some spicy mayo and maybe a sweet glaze eel sauce type deal.. yum

Give it a quick marinade. Google will be better than I can answer as mine always changes. Season it and cook it like a steak and make some sides.

Spicy tuna hand rolls with seaweed or soy paper

Or nigiri is also an option

I like to marinate it in a mixture of olive oil, lemon juice, soy sauce, lemon zest, chopped parsley, and a dash of Worcestershire sauce. Then cook it on the charcoal grill with a bit of lemon pepper and fresh basil. This goes well with pasta salad.

Slice it thinly, top each piece with a thinly slice jalapeno and cilantro garnish, top it all with a chili/soy mixture and ponzu, add a wad of wasabi on the side

The image you provided as nigiri is gunkan or gunkan maki (battleship), a type of sushi consisting of vinegared rice, wrapped in nori, and topped with a variety of ingredients.

This appears to be diced maguro (tuna), togarashi, and negi (green onion).

Nigiri is hand pressed sushi of vinegared rice typically topped with fish or other toppings.
