Grill it, fry it.....
Chipotle mayo-mix mayo w/ chipotle powder or adobo from a can of chipotles-mix it with mayo to taste.
Granish w/ tomatoes and red cabbage.

+1, for the chipotle mayo. Instead of tomatoes, I make a mango salsa, obviously mangos, diced red onion, jalapenos, cilantro, fresh minced garlic, lime juice and a dash of chili powder, let that set in fridge while frying fish. Dredge fish (Mahi, or any white fish will do) in flour, egg wash then panko bread crumbs. Fry, top with shreded cabage. Put in tortilla and eat.

when i make fish tacos I usually grill mahi mahi. Since you're using spec filets I would lightly fry them,.

I made some last night. used trout. seasoned with lemon pepper, chili powder and ginger. pan fried them w/ chopped garlic, green chiles, butter, lemon juice.

made mixture of cabbage, carrots, cilantro, garlic, onions, jalapenos to go on top.

sides: yellow tomato, thick slices, seared in the same pan as the fish (after salting them)

also cut up 2 plantains and sauteed them in equal parts butter and canola oil, w/ salt, brown sugar and a touch of maple syrup. they turned out ridiculously good.

Beer batter and fry it.

Cut your filets into strips the length of your tortillas. Make your batter out of your favorite fish fry and self rising flour about 3-1 ratio fry to flour. Add beer til it's a pretty thin consistency. Fry at 350 til golden brown. Cabbage, Pico and Guacamole are what I put on mine.

Little diced morsels of fried speck filets are the bomb for GOM excellence.

R2R, that sounds delicious. I like the seared tomato side. I love broiled, baked, grilled slices of tomato. I haven't seared them in a pan before, but now I will.

thanks Gris.

the next night after that I used grouper instead of trout and also made a dill sauce to go on top because I found my first go 'round a tad on the dry side.

Grouper works well on tacos. I sure had some good ones at the bicycle shop in Mobile. bossfloss can attest to those. Not a ton of ingredients, but fresh and darn tasty.
