been doing marinades with soy sauce, oil, honey/brown sugar, red pepper, garlic, and sometimes mustard. turns out really good - just marinate for ~15min and it doesn't overpower the taste at all. it's really just a subtle sweet heat you get and a mild asian flavor. great on the grill

1/2 tsp each of black, white, green, & pink peppercorns.

1 tsp fennel seeds

1 green cardamom pod

1 star anise seed pod

1 tsp coriander seeds

1/4 cup salt

Brown sugar

Toast all spices and grind to a fine powder. Blend with salt. Add Brown sugar to your preferred level of sweetness.



Cure 2-4 hours if searing/ grilling. Cure +12 hours for smoking.

This is my go to salmon seasoning. I used to shop at the Spice House when I lived in Chicago and one day said, what the heck, I'll try the salmon blend, and I was pleasantly surprised. Since then, it's all I use. It makes that crappy farm raised Atlantic salmon edible. It's continuously in my cart for when I order online.
