Snapper (red or mangrove) stuffed with citrus fruits, Rosemary, garlic and onions in the smoker.

it's been Red Snapper season in LA state waters since like March baw...

Federal season starts June 1st though

For me it is(in no particular order):

Grouper (especially yellowedge)
Yellowfin Tuna
Swordfish
Red Snapper
Triple tail

I was never a big fan of wahoo. I tried it serveral ways just wasn't one of my favorite fish.

Redfish on the half shell for me, due to the ease of producing a moist, perfectly cooked filet . Got some coming by Sunday, I hope.

Cobia is wonderful.

Redfish is too.

I don't really grill tuna as I prefer to just sear it lightning quick, and getting coals going for just that seems like a waste.

Got a whole snapper and some tuna last weekend. Scaled snapper, scored it, studfed it with shallot, lemon, and cilantro. Grilled it and sauced it with a sauce of chili garlic sauce, fresh orange juice, and olive oil. With some cilantro on top. LINK

The tuna I lightly poached in some olive oil, lemon zest, juice, and butter. Like a minute or so per side. Then let it cool in poaching liquid off heat. Sliced and sauced with poaching liquid with some Dorignac's olive salad added. LINK

Both were tremendous

And if it is fresh, there is no need for anything other than lemon butter and garlic......

People always tell me they don't like redfish..... Untill they eat fresh redfish on the half-shell. simply cannot be beat.

But according to this LINK consuming less than 6 ounces fo Escolar should not cause the undesired effects.
