I have never tried aging beers myself. Should I stick them in the back of the fridge and forget about them or put them on a shelf in the closet?
I'm obviously no beer connoisseur, but what's the point of aging them?

Picked up a couple of '15 Pumpkinators at Colandro's today and also a pack of Evil Twin Soft DK. I have never tried aging beers myself. Should I stick them in the back of the fridge and forget about them or put them on a shelf in the closet?
Depends. Cold tends to slow the aging process, while room temp will allow the beer to age more appropriately. I think i read somewhere that the ideal aging temperature for beers is 55-60 degrees.
As long as its not in a hot spot of the house or in sunlight, just stick them in a pantry or closet and you're good.

Well the imperial stout is 10.5% alcohol and black as night. I'm sure it's already delicious but I'm hoping aging will help mellow it out.
The pumpkinator just seems like it should be. In theory I guess that aging it should make the pumpkin/spice flavors more complex.
eta: So where I put it doesn't matter much, just no light correct?
