Prix fixe menu is done as a result of what the chef finds at the market that morning that is the freshest in good restaurants that don't keep a lot of stuff in a cooler. I would like to have the chance to go shopping at the big assed market in Paris once. It is larger than more than a few football stadiums combined and shite arrives from all over the night before.

In the '70s and '80s The Sazerac restaurant in the Fairmont Hotel was the swankiest place in town. Read about it here The menus handed to the females in the party did not show prices. This kept the gold-diggers from "ordering off the right side."
