'fire' is a relative term. you can gently cook an egg on a 'fire' as much as you can cook a pizza crust to nice and crispy. you can regulate temperature.

there is no debate that it takes significantly longer to cook a well done steak vs a medium-rare steak. and that the thickness of it can magnify that time difference. i question your confidence in the wide-spread practice of deep-frying steaks to well-done.

My wife does. We rarely order a steak out, but I burn them for her, the kids and I laugh at and ridicule her, she eats it...we're all happy.

I won't cook her a 2 inch steak. I cook her the worst piece of meat I have, generally. It won't make a difference...it's all shoe leather by the time she picks up a fork. And she'll love it.

I understand your reluctance to accept that, but it's just the way it works. Unless you and your friends have time to kill and don't mind waiting on the guy at your table who ordered a well done 2" cut of meat to get to well done in an oven, then it has to be expedited in order to satisfy the time element as well as the other steaks that are sitting under a heat lamp increasing their temperature and doneness, or resting getting cold. Sure, you can also wait to cook the other steaks until last, but it's still going to take time to get that steak to well done. The only other way one can avoid that is have it predone and then warm it up. It still isn't preferrable to cooking a nice cut of meat right the way a steak is supposed to be cooked.

That's always the rule. Whoever wants theirs cooked more gets the thinnest cut.

and these same restaurants are selling 2" steaks too

I'm far from a chef, but the WD steak gets seared 4 minutes per side and shoved in the oven for a 20 minute roast before I even think of searing my R to MR orders.

i'd never order a well-done steak. i choose medium-rare.

but keep in mind that there are pregnant people out there, old people out there, people with weak immune systems out there that are trying to protect themselves. maybe they want some beef.

you sear it hot or put it under a high-as-hell broiler until you get the color/crust you need, put it in a 500F convection oven and it will happen faster than 30-60 minutes.

There are things that maybe people with weak immune systems and pregnant probably shouldn't eat at all, and whatever they want to do or feel like they need to do is fine by me. Most aren't ordering well done steaks for that reason however. I just think it's a travesty and waste of some beautiful meat to do that, but even still, just understand how it's done at most places that aren't doing arse loads of volume in steaks. I've just never seen any way to take a 2" thick cut of ribeye and cook it all the way through to well done without either taking a good bit of time to get done or by having to nuke it or throw it in the fryer which is what happens most often in kitchens. Cuts like that just aren't meant to be cooked all the way through until they are brown throughout. What someone could do with such a thing besides drown it in ketchup or A1 I guess is beyond me.

My sister took a good friend to Besh Steak and watched her eat a well done ribeye.

Usually, it's fruitless to try to sway those who have chosen this path.

I'd imagine that if you butterfly the 2" steak, you can cook it a little faster, although I never cook past MR, so its just a guess really

I order my steak medium.
My wife likes steak well done but she doesn't order steak in restaurants. She just has me cook them well done at home.
When dining out she goes for sea food.

I have a friend who when cooking a steak (or anything for that matter) at home, will burn that sucker to the point of complete char. Obviously enjoys his steaks that way for some reason though, because he grills a lot at home.

Anyway,

When he goes out to restaurants he always orders his steaks medium, steak comes out medium, cuts into and complains its not cooked properly. Usually sends the steak back a couple of times, everyone else is done eating at this point, he gets pissed and just doesn't eat.

Every time everyone at the table tells him, why dot you order it well done? " I don't like it well done, i like it medium"

This is worse than someone just ordering the damn thing well done at a restaurant imho

Guy does the same thing with Tuna, then complains about it being dry

Ironically, Gene $immons couldn't stand the sight of real blood when eating out - he would order steak "cremated".

I don't think so. I can ask my sis, but I think it was just a pan-seared ribeye.
