I keep mine at room temp. On a side note, I bought some at Costco called Sky Valley that is really good.

This reminds me of the age old "Ketchup in the Fridge" debate. I am a fridge guy myself.

I keep none of my hot sauces in the ice box.
Ketchup, open containers of BBQ sauce and mustard yes.

I keep everything in the fridge since it's just me and Lucy in the house and I've got lots of room in the door. The only liquid I keep in the spice cabinet is Liquid Smoke and Wooster Sauce.

Saw Texas Pete was making siracha now. Decided to try it out and it's better than the original rooster stuff
