Trying to switch it up from steaks, burgers, etc.


Doing Grilled fish tacos this week....other "different" ideas?

Would you slice it and make a sandwich out of it? maybe a grilled turkey salad?...that could be really good...

They are...I may get some from guillory's soon...I have cooked all the ones I bought from Don's and Best Stop.

I bought a rotisserie and have been doing whole chickens, cornish hens, pork tenderloins, etc.. I needed saamthin new as well.

also really like to grill oysters. they would go well with your fish tacos imo.

What lamb are you grilling? Sausage? Chops?

A mint reduction would be really easy to go with it too.

buttery garlic onion is good...goes with anything.

Ham Steaks are good too.

TA: Rack of lamb. Sear, then low til 155ish on the inside. Again, I was just trying new stuff since it's been pretty outside. Came out ok, but I'm not real familiar with sheep.

MY: I just put my pizza stone on the grates of my weber, heat her up and away we go. Only tried bbq chicken pizza so it lent itself well to a bit of smoky flavor.

Agree with the grilled lobster tails. They are excellent. You can also get some of the larger legs of king crab, split them in the middle and grill them. Brush with a seasoned garlic butter or just lemon butter. The addition of the grilled flavor is really tasty.

I sometimes smoke a big turkey breast for sandwiches or just to pick at during the week. I really enjoy the flavor.

You can do a grilled stir fry by grilling a lot of veggies with some chicken or shrimp. I have one of those grill skillets (for lack of a better term at this time, on a Monday) with the holes in them.

You can grill up some chicken and use it in salads. Actually, I sometimes grill extra fish and then make a salad with the leftovers the next day.

I typically use store bought dough, but you can also get it from a local place like Reginelli's or make it yourself.

Once you have your dough, separate it into balls that can be spread to make individual-sized crusts. I usually make mine the size of a dinner plate for easy serving. The store bought pillsbury dough works perfect for this when split in two.

Heat grill to medium heat and brush grate with olive oil. Place crusts on grill and cook 5-8 minutes until brown on the bottom and fluffy on top. Remove from grill and spread sauce, cheese and toppings on browned side of crust (fluffy side on bottom). Place back on grill for 5-8 minutes until bottom of crust is brown and cheese is melted.

I've made everything from bbq chicken pizzas to regular old pepperoni pizzas this way. The crust is crunchy on the outside and light and fluffy on the inside. Also, it's easy to make individual sized pizzas so everyone can make their own exactly how they want it.

That place is dirt cheap. My brother eats there a lot for lunch. Do you like their tamales? My brother thinks they are really good.
