I have always cooked one down every year for the freezer, but last year could not find any.

So this year I grew my own, and picked two yesterday with two more steady growing in the garden.

I grew up eating these, cooked down with butter, sugar and cinnamon.

Most I have heard make them made into pies, but we always just ate it as a side dish. Usually with a beef roast and rice and gravy as my Grandma always served up.

But I never have met another person who even knew what they were, much less enjoyed them.

Anyone else here enjoy these wonderful crooked neck squash ?

I LOVE cushaw! Ate them growing up and I make the casserole once in a while. Almost bought one the other day, it's on my list of summer dishes to cook. It's like dessert.

My grandmother did the butter, sugar route and I remember enjoying it but I've never cooked one and I don't recall eating it anywhere else but her house. Maybe I'll try to cook one. Territos on Highland had them the other day.

Reminds me of butternut squash in some ways. I've only made it in casserole form. Haven't investigated any other preps. Have you, KG?

You can find them periodically at the Produce Market on Perkins/Essen.

Southside and the other band at Airline and the Farmers downtown are good, but I so wish that BR or NOLA had a market that approached Soulard in STL. Thirty minutes of having fun shopping, and you have the pantry filled for the week, and a twenty or two covers the tab.

Have any of you seen blue potatoes, there are things at Soulard that will make your jaw drop. Fresh beaver is availible, along with diverse species of fowl live?
