I do a cream based soup after boils.

I don't have measurements since I eyeball all my cooking
Couple pounds of peeled and deveined tails with all the fat you can get

Onions, celery, bell pepper garlic (if you had any of these in the boil use that)
Melt butter in stock pot, add fresh veggies and cook down then add boiled veggies.
Add about a gallon of seafood or chicken stock, a quart of heavy cream, diced potatoes and corn leftover from boil as well as tails and fat
Bring to a simmer and add any seasoning needed (usually I don't have to add anything)
Serve with cra kers or garlic bread.

Find one for corn and shrimp,(look at the recipe thread) and substitute the crawfish leftovers.

Check the recipe book in the sticky above. I have one listed under crab and corn that several folks here use. I listed subs for crab.
