Costco In Huntsville, AL Has PRIME Whole Briskets For $3.49/LB

Nice to see beef prices correcting.

I picked up a 12 pounder yesterday. Hope it turns out well. I am a bit inconsistent on my smoked brisket, but I’d like to think it has a lot to do with the SELECT briskets that my local grocery store has. Can’t even get Choice briskets from them.

brisket by definition is a poor cut of meat which has little inter muscle fat the thing that determines the grade of beef.

there are two cuts in a whole brisket the point cut that's the thickest part and then the flat cut, i prefer the point especially for corn beefs and pastrami. most texicans prefer the flat but the flat cut has the least fat which is why most texas brisket is dry.

i just don't think it makes sense to spend more money on a piece of meat that you're going to cover with a kitchen sink of spices and then torture it for 12-18 hours smoking it at low heat.

Difference between choice brisket and prime brisket is negligible.

this is how they grade beef,

first they look at they look at the ribs for marbling and that's how they determine grade, so if a carcass is determined prime then the entire carcass is determined prime.

but in truth there is no such thing as prime brisket.

The only select brisket I cooked was better than both prime ones I’ve cooked.

The price of choice vs prime for brisket usually doesn't seem to be very much of a difference.

Sam's Club has Prime brisket for $2.80 right now.

here in dfw especially heading into the summer holidays it's not unusual to see whole briskets in the bag for $.99 a pound.

and since as i've shown there really isn't such a thing as "prime" brisket, then yeah ya got bamboozled.

next you'll tell me you've bought prime chuck!
