Cornbread Salad

I grew up in Missouri and I remember eating cornbread salad at pretty much every cookout, picnic or get together. My wife had never had it prior to about a month ago.
Anyway, I had my wife make some and we took it to a big Halloween party tonight. People out here in California had never heard of it before and were like wtf? Well, after convincing them to try it, everyone thought it was awesome.
Am I the only one that thinks that cornbread salad is the perfect side dish for potlucks? Or is it just a Missouri area thing?

Cornbread Salad
I use a variation of something like this. It might look a little odd, but it is money.
I also use a mix of 1 can pinto beans and 1 can of kidney beans.

I love cornbread salad, but rarely make it. Hmm, I might have a work potluck that I could bring it to.
Also, I'd never heard of it until three or four years ago.

Nice. I would suggest throwing some kidney beans in there the next time you make it. It adds something to it.
And I generally hate kidney beans.

Chili Cornbread Salad
This one has chopped green chilies, cumin, pinto beans, sour cream and bacon. It's pretty damn tasty.
Avocado would be great added at the last minute. The other stuff needs to meld.
