The "danger zone" is between 40-140 degrees for up to 4 hours. No guarantee that you'll get sick, but it's recommended that you get yourself another pig.

One of the most common causes of foodborne illness is improper cooling of cooked foods. Bacteria can be reintroduced to food after it is safely cooked. For this reason leftovers must be put in shallow containers for quick cooling and refrigerated at 40 °F or below within two hours.Then again, that USDA link shows that beef should be cooked to 145 degrees. F that.

I wouldn't eat them. My rule of thumb is not to eat anything that stayed out overnight. Now, if you went into the kitchen at 2 a.m. for a snack and found them, then its OK to put in the fridge.

Do the only proper test. Smell them. If they don't smell bad then eat them. Plain and simple.

Don't eat them. Couple of years ago I ate some spaghetti that had been left out all night. Sickest I have ever been.

My grandmother makes me plates from dinner leftovers, sits them out on the counter which I eat for lunch the next day. Covered in plastic wrap. Literally all my life.

I hadn't had food poisoning(that I knew of) until I was like 30.

This too. Perhaps we've built tolerances. When I heard that most people put pizza in the fridge instead of just leaving it out I was shocked. Like for real.

Sauce makes a good agar for bacteria. Perfect breeding ground. I would not risk a day of the runs personally...but I'd like you to be our experiment, for research purposes.. Eat it!

If it smells bad, toss it because the meat is going to taste rancid even if you cook it. If it smells okay, I would give it a shot. I'd probably pressure cook them or soak them in vinegar for a few minutes before cooking though.

It smells delicious. I'm going to be the experiment tomorrow for lunch. I'll report back Sunday...if I don't report back, the pork chops killed me
