Commanders Chef's Table (UPDATE w/pics)

Reserving this space for photos from our chef's table experience tonight. My second time going, cant wait!

Ok sorry, long/busy weekend. Here are the pics!


Shrimp Beignet: Mixture of white shrimp, trinity, corn. Parmesean topping and piquillo pepper sauce


The standardd shrimp and tasso, pepper jelly, pickled okra and onion, crystal hot sauce buerre blanc.


Fresh LA oysters, lemon rind, black sea salt, coriander granita. Simple and awesome!


Spanish anchovies, burrata cheese, roasted heirloom tomatoes, toasted crostini.


This one was the star for me. Smoked redfish, "bbq" caviar, mexican corn and parsley puree.


LA crawfish and edamame, sweet peas, gnocchi, heavy cream and brandy.


ok this one was stand out as well. fried softshell crab, crab fat/safron bisque, salad of arugula, corn and lunch box peppers.


St. 75 - equal parts gin, lemon juice, Spanish Cava , elderflower liq, and basil simple syrup.

my descriptions get a little worse here...


Veal Chop, onion and mushroom duxelle, parsnip puree.


Boudin-stuffed quail leg, glazed with same pepper jelly.


beef fat injected antelope loin (this was amazing), seared foie gras, black garlic fingerling potatoes, roasted red pepper sauce.


cheese and fruit board, that Bocage honeycomb mixed with the cheese!



and of course the dessert bomb!

While it is still a once in a lifetime dining experience (twice so far for me) and nothing we had was bad, I did rather the first time doing it more than this one...not sure why. Already planning our next trip back! enjoy guys!

I have done this twice. Incredible dining experience. The head chef is your waiter. They really take care of you. You can order the same menu at a regular table. It is great but you don't get all of the bells and whistles. Enjoy it and give us a full report tomorrow. BTW, I am going there for lunch today. I will make sure they save some food for you.

Just enjoy the damn meal and don't worry about documenting it. It's food, eat it and enjoy your party's company. You've been before, act like it.

Not sure if we will do the pairings again, only two of us enjoy wine enough to appreciate it, plus their cocktails are great!

and yes I'll enjoy it, completely! I also enjoy snapping a few pics to share with friends and people who appreciate this type of thing!

I don't understand how someone taking a picture of their meal stirs emotion in another. It's Commanders Palace, not French Laundry. 1/2 the people in the place will be drunk. I think it's perfectly fine to take some pics if you want.

I'm more concerned with starting the thread 10 hours before dinner.

No shite. We went with our best friends a few months back and my wife is way less of a food geek than me and she wanted to take pics. Ended up making a real nice photo book/scrap book deal for both couples to remember the special occasion and eating at the chefs table.

I guess we were just amateurs or something, but it was my 40th birthday and we made reservations 7 months before, so I thought it was worth "documenting".

OP, it's a damn good time. You will enjoy.

I sure hope that half of the people in the kitchen aren't drunk. I assume that's where the chef's table is located.

I was trying to give advice that would make his experience more enjoyable for everyone. I certainly DGAF if ole boy wants to spend his energy that way.

It seems like photos will make the experience more enjoyable for him, so not everyone. You equate taking pictures of food as "spending energy"?

Probably fine if he snaps a few then goes on with conversation. If he edits and posts them real time to social media then I'd be wary.

Tory McPhail takes a lot of pictures of food he eats at other restaurants. Doesn't take but a few seconds to take a pic and it doesn't take much energy, if any, for me. I talk about food and restaurants with friends who share the same interests. Pics make it easier to describe the food and more fun.

I've never been bothered by anyone taking pictures. Only real complaint would be a dark dining room with the flash going off. Otherwise, insert Spiderman not giving a frick meme.

we did this at Brennan's in Houston in May. Just a great experience.

yeah just snapping a few to upload tomorrow or whenever. I like being able to go back and see what things are different from the last time, although i have only been once.

I have a friend who has gone 6 or more times and he keeps record of what they have. When they send you your reservation questionnaire they have a section where you can list any of your previous items that you liked.
