By ambitious, I don't necessarily mean "ground breaking." I don't think that's what he was trying to be there anyway. I think he just wanted to offer food with a traditional bent, yet served in a chef driven atmosphere with a real emphasis on procuring the freshest and best ingredients possible.

Nope, cause we don't care about all that commotion. All we care about is the taste. We are just as happy sitting at a picnic table under an oak tree as long as the food is good. Most of us could care less about being seen and more about being satisfied.

Using this logic, no sitdown full-service restaurant should EVER succeed in Lafayette, then.

Not true. For example, Cafe Vermillionville succeeds because the food is good not because of the cool restaurant.

I really liked Cochon, FWIW. I enjoyed my trips there but there were never more than a few other tables filled. I had good luck with my service I guess. It was always good.
