Cheesy Royale Enchiladas (pics)

Made these yesterday.
Ingredients
10 supersize corn tortillas
1 pound White American Cheese(get this at the deli in grocery stores), cubed
0.5 pounds Monterrey Jack cheese, shredded
0.5 pounds Cheddar Cheese, shredded
3/4 cup milk
1 tbsp butter
4oz chopped onions
4oz diced green chiles
2 tsp ground cumin
2 tsp onion powder
1 tsp garlic powder
1 tsp ground cayenne pepper
Vegetable oil(for frying)
Directions
1. In a medium saucepan combine White American Cheese, Milk, and Butter. Melt it all together on low. Be patient, do not raise the heat to speed process along. Melt it all on low, should take about half an hour.
2. While the cheese melts heat oil in a skillet to 375-400 degrees. Fry the tortillas one at a time for about 20 seconds, turning over halfway. Drain them on paper towels.
3. After the tortillas have spent enough time draining, take a tortilla, fill it with the shredded jack/cheddar cheeses and some onions, then roll and place seam side down in a greased baking dish. When finished top off the rolled tortillas with a handful of chopped onions. Preheat the oven to 350 degrees
4. Once the cheese/milk/butter is melted in the saucepan, add in the green chiles, cumin, onion powder, garlic powder, and cayenne. Mix it all together and let it simmer for a couple of minutes. If its too thick add more milk. You don't want it to be too thick.
5. Once that is done, pour all of the cheese sauce mixture evenly over the rolled tortillas in the baking dish. Then any remaining shredded cheese you have, sprinkle on top.
6. Bake in the oven at 350 degrees for 15 minutes.

Looks good! Mom used to do something similar, but the topping was ground beef cooked in enchilada sauce. I think.

Made this last night and one important thing to note is you have to use shredded cheese when melting and put it in a little at a time. The big globs of block cheese will not break down and blend with the milk mixture. It was pretty good though. I put rotisserie chicken in mine too
