Cauliflower Rice - Yuck

Am I doing it wrong? Forget the texture, there's a strong flavor like medicine. Like 1980's medicine when they didn't even try to make it taste good. I'm trying not to be prejudiced against it, but I'm feeling pretty judiced against it. Wrong brand? Wrong prep?

Birds Eye Cauliflower Rice is pretty good, just put it in the microwave and follow the directions. If I didn’t have to microwave it every time I’d use it a lot more.

Green Giant is the brand I had tonight, same microwave directions. The texture is pure mush like oatmeal and the flavor is like burned broken glass and blood stained flip flops in a white trash burn barrel.

Costco brand is actually good.

Warm it in the microwave for 5 min and drain it. Then put it on a skillet and roast it.

lol. It shouldn’t have tasted like that.

I’m guessing something was wrong with it. As it gets older/not as fresh it can definitely start to stink - same a broccoli. But cauliflower should have a milder taste than broccoli.

Cauli rice is God awful unless you’re buying Trader Joe’s cauli fried rice…even then you need to doctor it up.

Do you like steamed cauliflower florets? Ricing it isn't magically going to change the flavor and make it delicious. I use it pretty frequently, but I don't find the flavor quite as abhorrent as you seem to.

I get the bag of 4 bags at Sam's- steam, add butter, salt & pepper or add it to a broccoli/cheese mixture for a casserole.

I go through periods where I can’t stand cauliflower rice and times when I think it’s pretty good. The trick for me is getting it as dry as possible. I buy it already riced and I microwave per directions. Then I squeeze out as much water as I can before putting it in a dry skillet at medium to low, stirring it around until it isn’t discernibly moist. And then use it for fried rice. Sometimes a sort of jambalaya fried rice and sometimes a shrimp fried rice.

Easier for me to like is mashed cauliflower. It’s really good as a sub in rice and gravy.

I riced a whole head last weekend and baked the rice (425 for 15-20 min) with a couple teaspoons of sesame oil and 1/2 teaspoon of salt mixed in. I topped it with stir fry and it was very good.

I don't understand. What is mashed cauliflower a sub for in rice and gravy?

For me, some dishes cauli rice goes shockingly well with, like red beans [heretic!!].
My efforts with fried rice have been passable but look forward to trying this to improve a bit.

Sorry. For any rice and gravy meals, like roast and rice and gravy, cauli mash is a good sub for the rice. I like it better than riced cauliflower in those applications.

That's exactly what I did in OP. Next time I'll try toasting it after microwaving it per above instructions.

My stepdaughter eats it, but to me it looks about as appetizing as one of those Styrofoam looking rice cakes.

I use a variety (style/brand) that is a knockoff of garlic mashed potatoes that is frozen microwaveable. Forget the brand I just recognize by package.

The other stuff I have tried was at best blah; at worst, tossed it out. But I do really like fresh and frozen unprocessed cauliflower and prepped/raw at home. (Gastroporesis means I gotta cook it to death or go VERY little raw as it takes up to 24 hours to clear my stomach/1st segment small intestines and diabetes means best to limit potatoes/carbs)

Honestly, it works great for me with fish. I don't really do 'mock' things on my low carb diet, but it goes good with things that you'd like a lil rice with.
