A good sub for potato salad in or with gumbo is deviled eggs, for those so inclined.

I don't mind cauliflower rice, but it damn sure isn't a good replacement for rice.

I use it for fried rice on the black stone. There’s enough soy sauce, garlic and salt in the sauce and spices you can’t really tell it’s cauliflower

Taste is obviously subjective, and I’ve never really thought most rice tasted particularly good. Maybe Jasmine rice somewhat. But otherwise rice tastes about neutral to me. More of a meal extender than anything.

It's a texture thing for me, the texture between rice and cauliflower rice isn't nearly the same.

I chop it up to a rice consistency, then sautee it with

olive oil
onions
garlic
turmeric
pepper
some garlic salt
garnish with cilantro and lime

it's excellent tbh
