Please KISS and if you have recs for pieces to grill go ahead and list them.
I was thinking breasts but I'm not someone who eats chicken but the SO requested. So I'll throw a steak on.

I just season the pieces a few hours to overnight prior to grilling or smoking. A dip in 2 parts white vinegar to one part olive oil as you put the bird on the grill is good, too.

1/2 c salt kosher or sea salt.
1/3 cup sugar , light brown or plain.
8 cups water
Then what ever you feel like putting in there, bay leaves pepper corns, lemons, a little cider vinegar as well,
You just want it slightly salty and a little sweet when you taste it is my rule. 4-6 hours.
I never do this with the modern steroid huge chicken as I don't eat that anymore.
Sometimes it's impossible to find REGURLAR farm raised chicken but it's around.
