Brewing a Pumpkin Beer Thread

It's that time of the year and I am brewing a pumpkin beer this weekend. Because it's a fun,festive brew and its about time to do it if you want it ready for Thanksgiving I thought we could share experiences here.

Im planning on using about 3-4 lbs of real pumpkin (baked at 350 for an hour) and some McCormicks pumpkin spice at flame out. Gonna add the pumpkin to my mash.

Mash:
11 lbs 2 row pale
1 lb Caramber
1 lb Red Wheat Malt
1 lb Melanoiden Malt
3-4 lbs Pumpkin

Boil Additions:
1 oz Hallertauer 60 min
.5 oz Ginger 15 min
1.25 tsp McCormicks Pumpkin Spice 0 min

Yeast:
Safale S-04

Fermentation:
3 weeks fermentation
3 weeks bottle


Anyone see any issues with the recipe? I'm hoping for about 5 gallons and around a 6.5% ABV (About 70% Efficiency).

Anyone else have recipes they have done or are going to do?

I thought about going with a stout but I am bringing it to Thanksgiving with family members who like lighter beers.

Why three weeks fermentation? It should be done sooner than that.

I'd recommend putting the pumpkin in the mash in a grain bag, to avoid a stuck sparge. I used sweet potato in a mash one time without a bag and it was a mess, wouldn't sparge at all.

Friend of mine is gonna start showing me how to brew beer and wanted a winter/christmas time beer to try and make. Any suggestions?

Holiday spiced porter, most basic styles will work well with a little spice to them.

If using extract, do you just add pumpkin to the steeping grains?

Any of y'all use canned pumpkin or is it just better to use fresh?

Sure, although for some reason I want to say we added the canned pumpkin in as an extract instead of a grain. We've only done one pumpkin beer and it was an extract brew. I have the recipe at home.

Used canned pumpkin once, it turned out just fine.

I'll probably bottle after 2 weeks, maybe a bit longer. I have a long line of beers waiting to be bottled.

I did three beers in a week and backed me up.

I'd increase the pumpkin to about 5-6 lbs pre-bake weight. Use the smaller cooking pumpkins, unless you just want to SAY you used pumpkin. The large ones they sell for jack-o-lanterns have much less flavor.

we've used 4 big cans of libby's pumpkin pie filling with specialty grains in an extract porter.

3tbls of pumpkin pie spice at 20mins.
Turned out great.

Yea, the plan is to look for cooking pumpkins. I could use more. I'm going by Southside Produce after work. Hope they have something. I don't want to have to go to canned pumpkin.

Just add it to the brew after you steep the grains and are adding the extract.

I have used both Canned and fresh pumpkin. Both tured out great so I dont think there is a difference. I personally rather canned just for the ease. A lot of people use fresh just cause they like for all there igredients to be fresh. So its just a preference

In still a little confused I guess. Do you stir in the pumpkin, or dump it in or bag it and let it steep but not put it in the boil?

Put it in a big steeping back with the steeping grains.

I saw plenty at a few local Albertsons. I would think the produce stands would have lots also.
