Black Drum

Anyone have any good recipes for this?

Heard they are a lot like redfish.

it's a pretty large filet, scales still on.

I like them more than redfish, I usually either cook the whole filet on the grill or light dredge in flour, pan fry and make a sauce with the drippings. Don't try to overdo it, I think the simpler the prep the better. The only thing I do no matter what is to hit it with a squeeze of lemon just before servicing. Enjoy

How big was the fish originally? If it was smallish, say 16" - 23", it'll be fine grilled on the scales, fried, baked, etc...

If it was a big black drum, make a courtbouillon or feed it to your dog.

Yes, I heard as long as they still have their stripes, they are good. After that, not so much.

The worms are edible. Humans cannot host the worms found in Black Drum. I try to catch Black Drum when I go out. Love em.

16-20 inch black drum are excellent. anyone who says other wise is just a fish snob. now once they start getting to be 22-24 inches the meat gets a little tougher and fishier. and bigger than that...don't bother unless you're just really hungry and you don't know when your next meal is coming.

Black drum is fine. True, they should be small. But it's served in some of the nicest restaurants and people like it. I bought some yesterday and had a great meal.

thanks everyone for the responses...it's a larger drum, consensus seems that it's a trash fish....so i'm gonna thaw out some speckled trout so i'll have some good eats tonite
