Black Drum Recipe

Just started fishing again after being land-locked for way too many years. Now that I'm back in Louisiana and have a boat I've started catching fish again. Caught some nice puppy drum Friday in Lake Pontchartrain and want to cook them for dinner.

I'd like to hear some or your favorite recipes for drum. Thanks!

If they are under 27" you can cook them just like reds. I.E. fried or on the pit with scales on. If big nasty bull drum I would cut the blood line out, cut out the worms then grind, mix with bread crumbs/seasonings and make fish patties.

probably not what your looking for, but as a fisherman and hunter i would highly reccomend getting one of Chef John Folse's cookbooks. the encylopedia is an amazing all round book and if your more interested in just fish recipes get the Hooks Lies and Sinkers. they're expensive, but well worth it in my opinion.

I usually release any drum/redfish over 27".

The best thing to come out of a black drum is your hook from theirs mouths right at the boat so you don't have to mess with them at all....

A 16-22" black drum is damn good eating. Anyone who disagrees is crazy.

Once fried one up to feed the masses while at the camp.

I thought they are all drunk, no one will notice.

Came out pretty good, even I was surprised..

taste like chicken.

This, there is not much difference between a redfish and a black drum. There are some people who don't like redfish though and they are crazy too.

Who in the world doesnt like black drum? Thats crazy talk. Pretty much same damn fish as a red drum.

Black drum and redfish are both from the same family
Sciaenidae. They're essentially cousins in the fish world. Their habitats are quite similar, as are there diets.

Properly prepared Black drum is every bit as delicious as Redfish and sometimes almost indistinguishable.

Same argument people seem to wanna have over Red snapper and Mangrove snapper...if I'm eating either one..I'm one happy SOB.
