Big Christmas Dinner Party Cook

Last night was my wife's Christmas Dinner Party for their group(40 attended)so yesterday I did most of the cooking for it. I did make a couple of things on Thursday and baked them yesterday afternoon. The menu consisted of Grill Roasted Pork loin with a peach/mango/jalapeno glaze, Cornbread Dressing, Green Bean Casserole, Mac & Cheese, Sweet Potato Souffle, Porkey Gravy(homemade pork and turkey gravy combined that was was REALLY delicious!), Homemade Rolls and Praline Bread pudding for dessert. I didn't get pictures of everything but here's a few I did get.

Homemade Sweet Rolls



Glazed Pork Loin



Good thing I had the foresight to cook more than needed and did half a loin for us here at home.



Those rolls after were baked and coated with some melted butter.



The wife said they thoroughly enjoyed everything!

Tell me more about the peach/mango/jalapeno glaze please.

The glaze was made from a jar of E.D. Smith Peach, Mango and Orange Spread I got from Costco. I heated some up and added apple cider vinegar, blood orange juice from the tree in the yard, sweet jalapeno pepper relish and a lil water, oh and a lil of the rub I used on the pork. Bring to a light boil and reduce to simmer for a while and it's ready to use.


Here's a serving of the bread pudding. I texted my wife and asked her to bring home a serving for me. Also made a rum sauce for the bread pudding.



This morning I went to help the group clean the cafeteria and decorate for a God's Special Children's Christmas Party tomorrow we put on for them. All of the women there were at the dinner last night and probably every one of them came to me and said how delicious the food was last night.
