Best way to make hamburger patties?

What's the best way to form a patty?

My hamburger press in my opinion sucks.

I do okay forming them by hand but alot of times they shrink to much and fall apart while grilling.

What is the best way to make a patty?

What are you mixing in with the meat?

Unless you're trying to flip it neurotically, there's no reason for your patty to fall apart.

What cgrand said. And make a depression in the center of the Patty to prevent shrinkage.

They shouldn't be falling apart. What fat content of meat are you using?

I'm using some pretty fatty beef. My burgers don't always fall apart. But they do sometimes. My burger press came from harbor Freight.

Are you mixing in anything with a high liquid content (or, you know, liquid), and how long are you letting them cook before flipping them the first time?

I always just do it by hand. I forget I bought a press last year. Never used it. I usually do them early in the day then store in the frig until ready to grill that night. They've never fallen apart on me before and I use lean or sometimes extra lean ground beef.

I form them by hand and indent the center with my thumb so they don't shrink up so much. I usually use 80/20 meat. They've never fallen apart.

Burgers should hold firm while cooking, but should come apart easily when eating.

If you compress the shite out of it, the burger will have the texture of a sausage patty. This is only desirable if you like fast food style burgers.

If you prefer pub style burgers, ditch those compression devices and just use your hands to gently press loose ground meat together with a little salt and pepper.

I do the same. Form the patties and refrigerate for at least an hour and they won't fall apart. As noted a thumbprint in the center will keep them from shrinking.

I've been on a smashed burger method kick lately and I don't know if I'll ever turn back. I even did thick burgers smashed style last week (normally use that method for thin) and still got the crispy outside while med rare on the inside.

I agree. Tough to beat smash burgers. One of my neighbors recently got one of those griddles that go over the grate of an outside gas grill. My only hesitation with smashing them on my inside griddle is the mess from splatter so I may order one of those
