I use a cheap plastic press, then toss them in the fridge for a few hours. Sometimes overnight. They never fall apart.

Pet peeve of mine is people who don't flatten them out enough and it ends up being a goddamn meatball when it's done cooking. So you've got two inches of patty in the middle surrounded by a bunch of empty bun.

Use a meatloaf/ground beef mix. 80% Meatloaf/20% regular ground beef

I throw in some finely chopped onions and a raw egg in my ground meat. Try to only flip the burger once or twice, pressing a finger through the middle will also help an even cook theough

Try about 6 eggs and a half loaf of bread. That will really keep it from breaking up.
