Ben, FWIW your restaurant will always hold a special place in my life. I lived about 3 blocks away from your restaurant on Clearview Pkwy for about 9 years from 2003 - 2012 till I moved to MS after grad school. I ate there at least a couple times a week and took my wife to eat at your place on our first date after a Monday night Saints game. I argue with some of my some friends that live in Lakeview that Bud's in City Park doesn't even come close to the bud's on Clearview. I stop by for a #4 with sauce and sauce cheese fries every time i'm in Metairie and will continue to do so. Keep up the good fight Ben and hopefully things will work out for the best.

The best Bud's has always been just okay, in my opinion.

Just got back from Bens. The burgers are awesome. I highly recommend if you are looking to splurge on your diet. Don't forget the chili cheese fries. I tried the Ben burger (not on the menu)It was fantastic. The owner was there and was supercool. Will definitely try again.

Since you are a restaurant owner, let me ask you a question.

Let me preface that question with a statement. I've often wondered why so many restaurants use so much prefrozen food. Not McDonalds or other nationwide chains, but smaller counter type places.

Does it really cost that much more to cut your own fries, bread your own chicken breasts/tenders, etc.?

It seems like you could pay one guy to do all that stuff. So for $8 an hour, your restaurant would have a distinct difference from lot of other places.

Just a thought from someone who obviously has it all figured out.

Ben, have you chosen a cc processing vendor yet? Serious question. Someone in my family does it in the Nola area and it may be worth it to get a free quote from him.

I'm meeting with someone tomorrow, I have used him for my seasonal business for years so I went to him since we already have a relationship. If you've ever seen Toy Soldier Trees that is my business too I sell Christmas trees in Baton Rouge, Covington, metairie, and New Orleans. I almost went with the "Whistlemonsta" he is a sales rep for the same company but I felt it was only fair to keep my guy involved.

Seeing as I've never worked in a restaurant that does everything from scratch I can't really give you an answer. I can only imagine that taking out the convenience factor comes with a lot of headaches for the business and consistency for the consumer. Plus the time, cost of extra employees, wasted product, not to mention the commercial tools to make it feesable to do things like process the meat or potatoes in store at the end of the day you still end up with burgers and fries. There's a lot of hidden factors that go into it that most people don't think about. Like location, I would def have to raise prices big time to make it worth the extra cost and effort, so does my location (strip mall in metairie) warrant a 12$ hamburger? I doubt it. I would have to argue that we are a few steps above the big drive thru chains in almost every category except may be convenience. What other place will cook you a hamburger to order at 5am (keyword there is cook)? And our shake machine is almost never broken. I like answering questions and seeing what people think but I often wonder if they would really do things different being in my shoes. My friends have asked me similar questions and my answer is always open a restaurant and find out why. i hope I don't come off as an a-hole i'm really just trying to give you an honest answer but it's a lot easier said than done.

Cheers Ben.

That completely makes sense, and I hope you success in the tough food market.

I stopped in today for a number 2 with fries. Fantastic burger! Not everyday you find a place serving burgers with the meat patty bigger than the bun! I love the sauce too!
Not to be critical but I think a slightly bigger bun would work better. I'll be back!

Oh, I didn't see Ben and figured if he wasn't around front then was probably busy. I'll say something next time I'm there.

Ben is a man of the people.

I'm usually eating low carb, but after a long day of drinking yesterday with a Galatoire's lunch, this is what I needed...
