Is he really that good? I've only seen him beaten a couple times. It seems he grills or roast poblano peppers in every dish he makes.

I have no doubt he makes very good dishes, but you're right, he seems to be pretty one note with his flavors.

If you want to beat Bobby, you have to go rice. The guy can't make rice. It's why Emile and Gerard Nebesky beat his arse on Throwdown.

Most people underestimate or can't comprehend how good/talented a professional chef is.

I mean yea he's pretty fing good.

Even in the TV show chef world, he is one of the best, and is an Iron Chef

He's good, but his abrasive personality is why everyone challenged him on Iron Chef and why they build shows around people wanting to punk him.

To the OP. Yes I think Flay is that good. He does lose from time to time though. Pastries and desserts throw him for a loop and stuff he's never cooked all that much before. I saw him lose both on tacos and on eggs rancheros which for sure is in his Southwestern wheelhouse. But I've seen him win when the other chef had to basically tell him what the dish they were cooking actually was. Flay and probably all those Iron Chef types are masters at developing good flavor out of everything from a lobster to an old shoe.

The problem is that if you go too obscure, the judges may not know what it is supposed to taste like and then you throw away your advantage of picking the dish.

I've cooked for bourdain when he was in LA.

He said, off the record, my chicken kari risotto was one of the most inspired things he has ever eaten.

Now I don't know Wtf that means, but I took it as a compliment.

Flay went down last night on seafood corn dogs. That's the kind of stuff that trips him up is something oddball like that where the other chef makes that dish daily.

I would agree that Bobby Flay is one of the best right now, but this is not an indicator of that. Iron Chef America is a shell of the original Iron Chef. Back when it was the Asian production, being an Iron Chef was a legit statement of credibility. The American version does not empower that kind of reference.

Bobby Flay is an American Iron Chef, but he's not an Iron Chef. That's not to say he isn't good enough to have been one.

Didn't Flay go 1-1 against Morimoto and outright beat that other Japanese Iron Chef that had never lost? I agree though Food Network watered down the talent from the original 5-6 of their original chefs.
