Picked up a couple and thought I would try low heat smoking them for a couple hours then put them in the pressure cooker for a while. I normally just cook them in the pressure cooker but was wondering how a little smoke would impact the taste.

Anyone with experience?

Essentally when you smoke a corned beef you end up with pastrami.

Give it a good rub with mostly coarse ground black pepper and coriander with maybe some ground mustard and garlic powder and a little brown sugar. Smoke a few hours and then steam...pastrami.

You'd make pastrami! And it's delicious. If you have enough I suggest cooking half like you normally would and then put some mustard and a salt free rub or other seasoning on the other half and smoke to make the pastrami.

Well I'll be damned! Some real geniuses hang out on this board! Google search showed pastrami = corn beef brisket smoked and then steamed. That's exactly what I plan to do.

After I smoke it, I'll beat it up with the Jaccard mechanical meat tenderizer before I throw it in the pressure cooker. Looking forward to try this.

Muchos Gracias to all

I buy a bunch of these after St Patty's Day for cheap. Love smoking them and making Reuben sandwiches with it. Fantastic.

If you are making pastrami make sure the corned beef you use is only salt cured and not "ready to eat".
