Anyone here make cauliflower rice?

Made a batch yesterday to go with a chicken cashew curry. Really suprised how good it was . I just pulsed it in a food processor then Cooke for a few minutes in a small bit of oil. Anyone have any tips or good recipes? Thinking of trying a fried rice version tonite with egg, peas, carrots, green onion etc.

Seen the recipe, but I haven't tried it. Eating a lot of cauliflower now that carbs are bad.

I love cauliflower as well but fore some reason don't eat it that often. I was suprised how expensive it is these days , almost four bucks per head.

I do it all the time. I use different spices depending on what I feel like. I also add a handful of chopped nuts at the end of cooking for texture(walnuts are my favorite). Last weekend I browned in a skillet with a little cocunut oil then added in walnuts and put in a casserole dish a put dabs of herb goat cheese all over the top then into oven until browned. It came out fantastic. I also will put 1/2 cauliflower and 1/2 broccoli in blender and cook the same way in skillet and add Parmesan cheese at end with a little siracha sauce.

I've made burritos using cauliflower rice. Used the following recipe and it came out pretty tasty.

I've also been using spaghetti squash and tofu noodles in place of pasta. Both are pretty good substitutes.

I did it a bit when I was doing paleo. It is good when doing things with thicker gravies.
